Well lets see. The forza 3 video has most of the steering wheel cut off. You can't even see small movements like the GT5 video because of this. They are definitely there in Forza 3, though. Also, in the Forza vid, you only get up to 3rd gear most of the time and the turns are not very sharp meaning you rarely have to turn the wheel a lot.
My actual impressions from watching just the GT5 and Forza 3 videos is that the Forza 3 one looked a lot more realistic and actually LESS arcadey. I think you just need to find a better cockpit video of Forza 3.
