For Wii, I think some sort of Katamari game is sorely needed, but Kororinpa-type controls might make it too easy. There's always the dual analogs of the classic controller though.
For 360, I'd kill for a Raizing / 8ing arcade shmup compilation, or even the Wii's Milestone Shooting Collection on a region-free disc.
