No HD ready TV supports 1080p, that's why they are HD ready and not full HD.
As for the component cable on slims.. pretty much 100% sure it supports it. Though I think Sony's official cables are still in their PS2 component cable packaging, it's the same connector as the PS3.
Though I'd recommend hdmi for the ps3, if you want to upscale anything or watch bluray at 1080p. Well, "anything" now means dvd films cause ps2 b/c is gone...
