Well usually the Elite comes with two bundled full games at 299. The games are worth $60 total usually. The hard disk of 120GB costs around $120 when you buy it separately.. You can't buy a random hard disk and plug it in. It needs to be the ones from Microsoft...
The Pro comes bundled with two games as well, but that one is being discontinued, and are currently being priced between the arcade and Elite, which would make it $250 probably and comes with 60GB hard disk. That one is the best value for now.. They're clearing stock. So it means for $50 more than arcade, you get a hard disk, headset and two games, which in total is probably worth around $100-120.
The Arcade however comes bundled with nothing, or a few arcade games of maybe worth $5-$10. The drawback the Arcade has, is the lack of a hard disk. You can't download demos, buy DLC, play games from the original Xbox etc without a hard disk. You can always buy the hard disk separately though, but it'll cost you more in the end... If you don't need online and only want to play games, the Arcade is fine.. But if you want to try demos etc, you're better off with a Pro/Elite.
My opinion is that the Pro is the best value, especially now because they're clearing stock.. If you want an X360, get a pro for $250 while you can..
