I have considered doing this myself although I have come to the realization that I actually prefer playing PS2 games on the PS3. Unlimited memory cards, upscaling and image smoothing (often better turned off though) as well as being able to use the wireless DS3.
Of course thinking of it as a really expensive PS2/BD player doesn't exactly help.
The pros for the slim would be better portability, lower heat and lower power use, but those aren't worth trading a 60GB SKU away.
I may well end up with a third PS3 when the slim drops price in another year or two.
