You do know the 360 controller is just a standard USB device, don't you? In fact, there's a version branded specifically for Windows.
Some game genres (third person shooters, platformers, sports games) are easier to control with a gamepad. Some (FPS's, RTS's) are better with a mouse and keyboard. RE5 fits into the former category, hence the recommendation to use a gamepad.
BTW, if you do want to use your Wiimote on a Mac, then start here. You'll probably need to boot into Windows and it'll no doubt be a bit of a pain, but it can be done, it just won't be recommended as a way of playing RE5.
