Let's get something straight right now...

720p is redrawing 720 lines per refresh (thus the "p" meaning "progressive" or refreshing every line per cycle)
1080i is redrawing 540 lines per refresh (thus, the "i" meaning "interlaced" or refreshing every other line per cycle)

On LCDs (or projectors) the refresh is hard to notice because of the pixel refresh on LCD is so low. (By the time the electronics tell the LCD to refresh it's most likely still "shutting down" the pixel from the last refresh.)
On "Analog" or rear projection sets with a faster refresh 1080i can have "flicker" issues. So 720p will look better on rear projection sets that don't use LCD technology.

You could say, if you run a 60FPS game on a 1080i display, your only truly getting 30 full frames per second on average. With "cheap" LCDs, you will notice this less.
