I agree Gauntlet needs a serious reboot. I played the hell out of the original and Dark Legacy, but 7 Sorrows was terrible.
I think Resident Evil is still a great series, but I think it is heading in the wrong direction and needs to return to its slow paced exploration roots while keeping the updated gameplay (particularly Wii controls).
I think Zelda needs a reboot. I enjoyed TP but it didn't really grab me like ALttP, OoT, MM, and WW did. Each of those brought new elements to the series, while TP was a bit of a regression.
I really enjoyed the new Prince of Persia as I thought the series was regressing from the greatness of Sands of Time.
Batman may finally be getting the game he so deserves with Arkham Asylum.
Fallout 3 was a major reboot of the series. Really, we are probably seeing more reboots in video games than in movies.
Square needs to bring back Chrono Trigger (as long as they do it right).
And for those that claim that games are challenging today, we need Battletoads.
