I haven't played most 3D Castlevania's i'm going by the ones i have and have played. I like both PoR and SQ but not as much as the others i have. Can't believe OoE has only been mentioned once. OOE pulls its own weight for being one of the Castlevania series, however it is not the best of the best. Try some of the older ones like the Turbo-Graphx 16 version and see for yourself. I could see possibly top 5, not top 3.
