I would have to disagree with you calling Ricochet dodgeball. Dodgeball entails dodging balls. A true game type of dodgeball would entail having to catch, dodge, and throw. All completely doable with Natal. Very easily online compatible with teams, etc.
I have also thrown about the idea of using the disc game from Tron. That would be badass as well.
Fighting games wold be fun.
A good use of the tech would be any game that detects the entire body, legs, arms, head, etc.
Some sort of on rails racing game where you have to jump hurdles and punch people beside you and such.
