I disagree with you saying Uncharted doesn't have soul.
For me uncharted, infamous and msg4 makes the ps3 shine. (and Motorstorm PR)
But the game that has more soul than any game ever is Demon's Souls, that game is amazing and truly show what gaming is all about. (pun included)
Agree with you saying that KZ2, resistance and R&C lacked soul.
But the game I mostly hardly anticipate and hope it blows me away is Last Guardian, it will make any other game feel soulless (excluding demon souls of course)
