You gotta start with the right game. Final Fantasy IX is proven to be an effective girlfriend training device. There have been studies.
Let her play the beginning, and name all of the characters herself. Then once she starts getting into trouble in combat (in the forest?) switch it so that you're sharing control of the characters. (In the configuration options, you can split the characters between controller 1 and controller 2.)
