From what I've heard, you'll actually be able to pull the spears and such out of the gryphon by climbing all over it.
I assume you'll have to pull out arrows and spears, then feed it via the barrels to heal it. You'll travel around together, with the gryphon guarding you from the soldiers and stuff, and you guarding him by healing his wounds. Then you solve puzzles together.
