I think there is more to graphics then just raw visual appeal. You need to factor in things like environments, the activity/interactivity of the surroundings, color palette, lighting etc.
So based on that, I'd definitely say Uncharted 2 and Assassin's Creed 2 were the most impressive for me at E3. (I didn't see much of GoW3, so can't comment on that)
