I have a Wii too, bought it mainly for Fire Emblem.
My favorite genre is RPG too, J-RPG to be more specific. W-RPG are boring to me.
The Wii will get most JRPG it seems, so you already have made the good choice.
The Wii already have more JRPG than the other two competitors, and will leave them behind in the next 6 months in amount of JRPG it is going to get.
But still, you will miss some other JRPG that are not coming to the Wii and seem good (for now, FFXIII and Shiro Kishi Monogatari).
I'm planning on buying another console too (first time I'll do that), and if you prefer JRPG, there's not even the need to think, go get a PS3. That's what I will do anyway.
The only exclusives JRPG that the XB360 has comes from Mistwalker. This studio is a train wreck since the time they decided to go exclusive with MS for their first games. The only thing they had going for them was the big names Sakaguchi and Uematsu. But Sakaguchi just destroyed its studio reputation.
All of their games are flopping now, partly because they are not so good. Blue Dragon is barely average, except for those that just discovered JRPG perhaps (the veteran JRPG players all say DQ VIII is far better). ASH is barely average too. And Trusty Bell (Namco Bandai) is coming to the PS3, enhanced.

Of course, JRPG sell the most in Japan, so japanese devs will test the success in Japan before trying a release outside Japan. We had confirmation of what I predicted: XB360 demographic is not for JRPG, most will flop. Doesn't sound good for the future. Especially since MS has to pay to get JRPG on its console, which will never sell well, given its poor market in Japan.

What's good with the PS3, is that even if a JRPG doesn't do well in Japan and is never released outside of Japan, if you understand japanese, you can just import them without the need to mod your console. For me, this is a killer app, especially for JRPG.
A game like Agarest Senki that flopped, has a tiny chance to ever be released outside of Japan, but you can still play it (providing you understand japanese) if the game suits you.

If you like W-RPG too, the choice is harder then, and I can't help you.
And if you like shooters and racers, the XB360 seems like the best choice. As MS stats showed, the most played games on the XBox Live for the year are all shooters, and I think there were one racer.
It's a shooter fan console, despite people wanting to make you believe the contrary.
