It's not just swapping discs.  Sometimes, even the common data that would normally be copied on every disc in such situations is too large for a DVD.  I explained this about Uncharted in my post a few above (the wall of text :P ).  Such gamesare just not possible without a larger storage medium, no matter how many DVDs you throw at it (unless there was a HDD to store all the data on, ala the PC) .

Also, one problem with multi-disc JRPGs is that when you get to the 3rd disc, you can't go back to areas on the 1st disc. If everything was on one disc, you can go anywhere at any time, so you don't have to worry about not finishing side quests early on. 

And how would sandbox games like L.A. Noire or GTA work with multiple discs?  Imagine switching discs every time you crossed a bridge in GTAIII.  It would be a pain in the ass.
