Hmm, so I still have two problems:

  1. I just did the thing where it didn't take input from BlueTooth devices again.  I tried turning the power off, waiting a few seconds, and then turning the power switch in the back on again and that didn't fix it.  I turned the switch off again and I'll try again when I'm done writing this post.
  2. A few hours ago when I was done playing it wouldn't actually turn off.  The remote control didn't turn it off and holding down the power button didn't turn it off so I finally just had to flip the switch in the back.  I tried turning it my PS3 input so I could try and turn it off with the controller but I had no picture and no sound.
  3. While playing Uncharted I had the screen turn completely staticy and then turn black for a few seconds and then it came back.

I have completely new cables so I don't think it's the cables (I even bought nicer ones instead of the cheap generic ones).

-edit-

I couldn't turn on the PS3 with my remote or controller but after manually turning it on it recognized my controller again.

The not recognizing blue tooth devices is possibly due to interference from other electronics in the area.  Im not sure what frequency BT is, but if you have electronics running at a similar frequency, I'm sure that will mess it up. Like this guy :

"After hours of head-scratching and headaches, I remembered that my Logitech Z-5450 5.1 speakers were also wireless. I wondered if those were causing the issue by adding some sort of interference and making the controllers disconnect. On this hunch, I hooked the PS3 directly to the TV for sound and turned my Logitech system off. BINGO!"

The graphical and power issues sounds more serious. GPU could be going =/
