You can pause, hit select, or hit the PS button to give you a chance to think out a plan. Pause will blank out the playing board, but still show you what is next. Select will cover up most of it, but you can go to load or save and the screen is transparent. Hitting the PS button is pretty much the same with the transparency.
My best advice is keep trying. Eventually he'll get a round of bad luck and you'll be able to win. I didn't even notice I was winning till I did. Took only ~20 seconds for the one where I finally got the trophy.
