As far has head kicks, you can block them and if you time it right you can catch their leg and punch/take them down. As you get more tired or if you are unbalanced while putting your hands up, a blocked leg kick will still do some damage.

As for create-a-fighter, while I admit some more options would have been nice for nicknames and some more general stuff, what they did with "choosing" moves is understandable. It would take a very long time to make a guy if you chose every move he did in every situation.

You also mention that you can do too many superman punches, head kicks etc. becasue they don't take up enough energy. However, they take less energy because they are not as strong in the game as they are in real life. By all rights, one - three clean head kicks would knock out just about anybody, but they can't do that for a video game. So yes, you can do more of these signature moves, but they aren't as strong as in real life. However, you can still do a flash KO if you catch somebody clean while they're off balance, coming at you or throwing a strike of their own. So I understand why it is the way it is.
