There is the fact of gravity and the theory of gravity, and the fact of evolution and the theory of evolution.
The fact of gravity is the observation that there is a force which causes masses to attract each other, the theory of gravity is an explanation of this observation.
The fact of evolution is the observation that life changes over generations, the theory of evolution is an explanation of this observation.
You are correct in saying that the theory of evolution is more fully understood than the theory of gravity.
