They are practically identical, like most current multi-platform games.
To understand why, some quotes:
Tomb Raider Underworld developer (a 6.8 GB game, the limit of a 360 dual layer DVD):
"asset-wise 360 was around first, so we made stuff keeping the 360 in mind first."
Darkness developer:
"In The Darkness they have pretty similar performance, but that is very intentional from our side. We need the two platforms to perform similarly, and therefore we can’t design features that would take advantage of the difference of the two platforms. To my knowledge the PS3 has untapped potential in its seven SPUs"
IMO differences between PS3 and 360 multi-platform games will remain relatively small, until the 360 is discontinued. Same for the PC version, apart from potential higher framerates and resolutions.
