What is the point of making games/parts of games so hard even on easy?

I'm talking about games with variable difficulty settings.  If you call it "easy" or "casual", that's what it should be.  If I wanted the game to be hard, I'd play it on "hard".

 

In the case of galaxy some are really easy and others hard.Did you get all stars?
