Well, keep in mind what the real target market for many M-rated games is- it is those mid-teens. By having all those violent scenes, those teens think that it is indeed, a very "mature" game. However, those who are truely mature know that this is really over the top, and is nothing more than gratuitous violence for the sake of violence. Some may enjoy it, others, like yourself, may think it's a bit much, but we do need to look at who their target market is.
Regarding the second part of what I quoted, it's taboo because of the stranglehold that religion has over our laws. The naked body is seen as sinful, and the act of sex out of marriage, even moreso. So, to uphold a pure mind *coughBScough* and remove lust from those to whom you're not married, everyone has to stay clothed. Conversely, while religion had some rule in parts of Europe, when the Dark Ages ended, many of the church's rules were being cast away rapidly. Keeping such a rule in place would be a throwback to those days, and thus it was not a "sin" in a legal sense anymore. Personally, since the body is a natural thing, one shouldn't be afraid of what they have. To me, nudity is not a problem; if anything, not allowing it may be what keeps so many clothing companies in business... :P
