It's not entirely clear. That depends on what content takes up how much space. For example, movies are inherantly compressed. Most sounds are as well. You can't count on being able to recompress those things at all. On the other hand, textures may be able to be compressed at a 5-to-1 or better ratio.
It may just be easier (and cheaper) to put the game on two DVDs instead of working some technical chicanery like that. Both game types should lend themselves to multiple discs without much of a fuss.
Ultimately, there is no technical reason why porting either game to the 360 wouldn't be easy. Anyone who tells you otherwise *wants* there to be technical reasons.
