Soul Calibur 4 - by far. It not only looks beautiful when you fight, it also play beautiful.
As a martial arts movie fanboy, I believe SC4 is the closest fighting game to match the chinese martial arts movies in fluidity and motion. There's just this solidity to it that I dont find in any other fighting games.
(ive been playing it on and off since release day - its truly evergreen in regards to pvp combat)
