Half of episode 1 was footage from the Bardock movie, footage from the original Dragon Ball series, and footage that wasn't originally aired in English, but it managed to end at the same spot as the original airing of Episode 1. Episode 2 ends where the original episode 3 ends - episod 3 looks to leave off where Episode 5 did.

The pace is a lot more brisk.

I kind of avoided the Dragonball Z and GT movies, tv show in the past.  I've seen every episode of Dragonball (However its been so long I dont remember it all now).  So would I be in the dark or missing anything?  Or would this be a perfect substitute for everything I missed?

This would be.... basically perfect. Most of the movies are non-canonical, and the show recaps the important bits of the original series to give proper context for new viewers.
