How about I give you an example.
Crysis/Warhead, by many, is believed to be the best looking game so far, and the most technically impressive. Now lets say somebody is playing Crysis on a HDTV at 720p resolutions(we will use 720p because there aren't that many console games that do higher) at highest settings using component. Now lets say that they play a 360 that has HDMI and put in Gears of War 2. Both games are running at the same resolution, and same TV. The only difference is that they are using two different cables, and are on different platforms. Do you think Gears of War 2 will look better than Crysis because it is using a better cable? I don't think so. Now Crysis might have lost some quality due to the component, but the quality it loses is so small it is barely noticable to most people. That is why I say the difference isn't significant enough to drastically change the way a game looks when in comparison. Remember though, this is all assuming they are running at the same resolution.
So yes you lose some picture quality, but nothing very noticable, or significant.
