The Ps3 uses largely alien technology. The Wii and 360 use a standard PPC core and while Sony's cell does too to an extent (the main core) the spe's are entirely new technology, also as mentioned in the article the codes for breaking the blu-ray drive are unknown (if the exist).
But perhaps the biggest impediment is price, if you hack your $130 DS and accidentally break something, get another one. If you break a $400 PS3, well dang thats a lot of money.
Plus a system like the PS3 doesn't have the kind of commanding market share it takes to inspire a community of hackers like the PS2 did (which was a very hard to hack system, especially in its later board revisions Athough i was doable with some extensive mods).
