I'm guessing around 2.1 million in the first week. At least 495,375 copies have been sold so far. That number was taken from Bungie's official website. They post the # of Halo 3 players online as well as the number of unique users online in the past 24 hours. Granted that's only the # of people who have Xbox Live along with Halo 3 but it's a nice minimum number.
