I agree with your post in general (though I think you meant close-minded), and I see the rhetorical point that Richard Dawkins was trying to make (and generally it is true), but it is ultimately just that: rhetorical. Most of the things that we cannot be sure are "100% fact" would be considered 99.999999999% fact, if you could quantify something's truthfulness that precisely.
