I can almost guarantee that half of them don't even know some of the very basic features of their Macs because they simply use them for the very basic tasks such as MS Office, internet, and email.

The use of Mac computers depends on which building you're looking at. For what I have to use the Macs for, you'll need to add stuff like Adobe (CS3 currently) Illustrator, InDesign, Photoshop, Soundbooth, After Effects (or Motion), Compressor, and Final Cut to your list to be close. In fact, I would say a majority of the macs have this kind of software on it for that purpose.
The campus is now updating some of their PC's too, I've seen new Core 2 Duo PC's (instead of P4) with widescreen monitors (instead of 4:3 ones). There are TONS of PC's though so I don't know how many they're going to replace.
