Ratchet & Clank - Quality platformer with emphasis in 3rd person shooting.  Great characters & animation.

Siren: Blood Curse - One of the few true survival/horror games found on the PSN.

Valkyria Chronicles - Probably the best JRPG this gen.

Little Big Planet - Best single and multi player 2.5D throwback platformer around.
