I just finished Dragon Quest swords and although is not perfect I thought it was great and had lots of ideas. and yes maybe some of those would work with zelda.
-first person view
-having a partner that aids you in your quest
-revisit old dungeons and fight bosses to increase experience
-using spells
No on-rails of course and keep link a silent hero.
and a gritty hyrule? no thanks. Is zelda, not Persona.
