You're kinda missing their point here. Just because you don't want to give a source of joy up doesn't necessarily mean you're dependent on that one thing.
Let's say you are a "fullfilled" person. You have a loving wife, beautiful kids, Landed the job of your dreams and have a lot of good friends. Then suddenly researchers made a study saying that staying with your wife reduces your lifespan by 10 years because of stress, compared to single men without a family. What are you gonna do divorce your wife so you don't have to ever see her again? That's the least stress with marriage you can get. Or we can take the same analogy with steak that you don't have to stop cold turkey but eat it sparringly, like only meeting your wife on Saturdays, parties and the occasional Thursday. Eventhough you have other sources of happiness would you really do that?

Also, I use to go to a Chinese temple where everyone was a vegetarian (not as extreme as vegans) and their teens still have break outs and people still die at age 59 from strokes. And I also have a uncle who can eat a whole baby pig(like once a month), 2 legs if its a grown pig, 64 years old now and doesn't even have hyperlipidemia.
