That's the really simple and easy part if you have an appropriate screwdriver, if you're really worried maybe you can ask a local computer store to do it for you (for example when you buy a bigger harddrive there).
The time consuming part will be downloading and installing Yellow Dog Linux and the most teasing parts configuring everything to you personal taste and optimising and setting up the emulators you want to use (install the YDL dev package, to build your own files to set up some applications).
You'll probably want to install SPE enabled media libraries, install the SPE scaler tool for quick graphics scaling for games and emulators, install the Dual Shock 3 drivers, maybe Wi-Fi drivers and in the future when the project is mature the SPE Mesa graphics drivers (for OpenGL functions) currently under development. Some of these may be included in the YDL 6.1 package, I am not sure.
