I did it very easily. Hardware-wise it's dead simple, there's just a single screw holding the HDD in place. You plug a new one in, fasten the screw back and you're done. Then you'll just have to format it from the on-screen menu when you turn the PS3 on.
As for your settings and data, you can easily copy them to an usb drive and then restore them.
Sad but _important_ exception: some game data are locked and can't be exported and restored. Killzone 2 and Motorstorm:PR in my case. Your trophies will be kept, as they are linked to your PSN id, but your checkpoint in KZ2 and rank in multiplayer or unlocks in Motorstorm will be lost... Or at least I did not find a way to recover them, if someone can correct me, please do.
