Last game I had to swap discs to play was Lands of Lore III. Not horrible, but a little bit annoying.
Planescape: Torment is on multiple CD's, but there is an unofficial patch that lets you install them all and avoid keeping a CD in the drive too. Morrowind Game of the Year Edition has game and expansions on several CD's, but you can install them all on HDD. Disc swapping isn't the end of the world, but single disc or HDD install rule.

Edit: obviously I'm talking about games for PC, where you can almost always choose between playing from optical disc or doing a full install, and where expanding HDD space is easy and cheap... Well, to be honest, it is too on PS3, you haven't to buy proprietary drives.
