It's not that everyone hates it, I'm 100% positive you could find lots people who don't like some other FF. Everyone has different opinions, and there's no Final Fantasy that's better than any other (from what I've played VII, VIII, IX, X and XII), some are just suited to people more than others. For instance, XII is arguably the most contraversial Final Fantasy games. Many people did not like it, others consider it a favourite and welcomed the change in the series.
You should try finding people who also like Final Fantasy VIII, rather than concerning yourself with why others don't.
I think the reason their might appear to be so much negativity towards the title, is because VII was so popular and sold so well. Many people may have been expecting VIII to be a similar game to that of VII - but perhaps their expectations were not met.
Personally, I love FFVIII and it's my favourite FF and favourite game ever.
