For one, PS2 emulators are generally a mess and don't have very good compatility. Two, because there's no 3D acceleration with Linux on the PS3 (no drivers/access to the RSX) you would not be able to run a PS2 emulator anyways, even if a decent one existed.
I have Gentoo Linux installed on my PS3 (but I would not recommend Gentoo to a linux beginner) and it works okay I suppose...but there's so little ram/hard drive space, and with the GUI being sluggish at times I'm not really motivated to use it that often. I believe SNES9x will run on the PS3's PowerPC architecture, but I'm not sure how it performs. You'll have to search google for info on that.
I use linux most of the time on my PC, and if you're looking to try out linux, I'd recommend just getting a LiveCD of a popular distribution like Ubuntu or something and trying it out on your PC, rather than trying it out on the PS3.
LiveCD's don't install anything or make any changes to the hard drive unless you want them to, so they're really good for getting a quick look at the OS.

Edit: Also, 99% of linux apps won't use the SPE's anyway, they'll just use the 3.2Ghz main core. No commercial PC games will run on the PS3/linux combo either - even linux native ones - because it does not have an x86 or x86_64 processor architecture.
