The only reasons I can think of is to play some emulators on your TV, to love tinkering with Linux (which doesn't fit the OP), and simply to have no other computer... how likely is that.
I actually wanted to do it at some point, in order to have StepMania on it, but apparently not doable with the extent to which the RSX is locked out.
edit: On topic though, Yellow Dog Linux was the original choice, I think. But Ubuntu has a PS3 version as well and the community and popularity actually seems better. Remember to backup before you split the hdd.
