The fighters you can get, off the top of my head for the PS3 are, Tekken 5: DR on PSN store, Virtua Fighter 5, Soul Calibur 4 and Street Fighter 4 which you already said you didnt like.
I don't know much about Soul Calibur, but it was positively recieved.
Virtua Fighter 5, apparently is very good if you can get into it. I had VF4 and I couldn't. It's a very technical fighter.
Tekken 5: DR is very good. I had Tekken 5 on PS2, and I can only assume this is better.
Tekken 6 is also on it's way late this year.
I recommend renting before buying with these titles to find which control schemes you like the most.
