Ignoring obvious things like taste, it seems that it is based on similarity to humans, in Western society at least
Top Tier
Humans - Do not eat them
2nd Tier
Dolphins - They're playful, and remind us of children
Any monkey/ape/gorilla etc - We evolved from them, it's basically cannibalism
3rd Tier
Other Mammals - Most people eat them
4th Tier
Fish - Even more people eat them
N/A
Insects/Rodents - Don't eat them because they're gross, not for moral reasons
