This is why my most-played racing games are Mario Kart Wii, F-Zero GX, and Burnout 3: Takedown.

I've heard that Gripshift on PSP is another good one for a racing game that's more about the gameplay than the visuals.  Never tried it myself, but from what I've seen, it looks fun.
