I actually held out on purchasing any Guitar Hero / Rock Band games when I was a Wii only owner (I bought a Wii on the morning of the North American Nov '06 launch and didn't get a 360 until May '08). While the games are certainly still a blast on the Wii, if you have a Wii and either a PS3 or 360, I'd say (without reservation) to go with the HD console version.

The only downside is, of course, that you don't have free online play on the 360.

And that's a very big downside to me.

I went to the Wii version. If the DLC works as they say (with SD), there won't be a problem. The online system on the Wii seems "perfect", being always online such as with the X360 version (I think it's the only game that does it). I already got 3 Wiimotes, with the price defference between both versions, I'll purchase another one.

This said, to me, the HD definitely does not compensate the online (and yes, I own a 42 inch HDTV). About the fidelity, I own an Onkio and I didn't notice the difference you say in other games. I hope this is the case as well.
