I'm not sure if u do this, but i used this to beat all the bosses:  U have to lock on (with Z) & sidestep (with analog stick left or right) to avoid most attacks.  Then after they use their strong attack at the end of their attack combo & are vulnerable, u attack them.

The motion controls are what make NMH the only game of its genre that I like.  And by like I mean LOOOOVE.
