Given that only 3 main entries to the series have been released in Europe there isn't much choice. But it'd have to say Tales of Symphonia followed closely by Tales of Eternia. I really couldn't get into Tales of Phantasia though.
Fingers crossed Tales of Vesperia and Tales of Symphonia Dawn of the New World will make it here.
