Adventure - Fallout 3, Best RPG you will find on the 360 in my all powerful opinion.
Shooter - A safe pick would be Gears of War or Halo 3...But my recommendation is none other than Call of Duty 4. Last time I played it online there were still 100,000 people on so its still well liked.
Racing - Burnout Paradise. Forza 2 is all right but its really a Gran Turismo wannabe. Also Need For Speed Shift is coming sometime this year and its supposed to be a Sim racing game rather than the usual crappy arcade style.
