What do they have in common really? You pick a character with special moves to defeat the other character.
Everything from movement to the stage to weapons to even how you win is different.
I think there are enough similarities to call them fighting games but too many differences to put them in the same category directly. It's kind of like turn-based RPGs, strategy RPGs, and action RPGs. Sure they're all RPGs, but the way each type of game plays is totally different so they're subgenres.
