Like that Resident Evil 3.5 beta that was scrapped...that looked much much better than the final product (RE4) but that was enver made to run on the gamecube.

 

Wasn't that explained by having extemely cramped game areas in the demo (one or two small rooms) as compared to the village squares and yawning chasms of RE4?

Seems crazy that capcom would make the beta like that knowing that at some point Leon would have to go out of the room and on to a screen with more than 2 enemies...

 

Like you said, the beta was scrapped and the game concept completely retooled. The original idea might have been to have very few, but scarier and more challenging enemies, along with a much smaller game area.

I really don't know, but it makes sense that if the scope of your game is narrower, you can allocate more resources to fewer objects and make them look better. They likely just decided that a scope grander than REmake was worth the sacrifice in eye candy.
