What's the best HD fighting game?

Well, Itagaki is longer with Tecmo, and Tecmo has merged with Koei. For those reasons I'd say there's a good chance for Team Ninja IPs to become multiplatform, but at the same time I doubt they'll have the same feel they had under Itagaki. My bet is when DOA 5 comes out, it won't truly feel like a DOA game.

Like you, I also loved DOA 3; it was one of my most-played games last gen. DOA 4 as an Xbox exclusive was part of the reason I bought my 360. However, while DOA 4 is fun and looks great, I honestly thought DOA 3 was the best in the series.

I don't think it'd be that hard to emulate the "feel" of DOA. Boobs and reversals. That's about all there is to it.
